Norway, which had a Bluefin Fishery in the 50′s, 60′s and 70′s has now been given 30 metric tons by ICCAT 2013.  This is perhaps a foreshadow as we see a Northeastern migration of the Herring and Bluefin migration patterns.

Japan-uary, 2013

My girlfriend and I left early on January 16th for Tokyo.  It was a plan in the making since May of 2012.  We both saved a bit of money each go around.  I often say Japan is from the future, for the 14 hour time difference demands respect and optimism.  We took a bus from Portsmouth to Boston, from their we caught a plane to La Guardia, then a taxi to JFK, from JFK we took a 12 hour flight to Tokyo, and arrived in the future.

Together, my girlfriend and I shared a deep intrigue for Japan, not only as a food culture but as a true contrast to our own perception of reality and civilization.  I have traveled extensively to Latin America and Europe, and I can navigate through language and societal standards in the western hemisphere.  However, Japan was a complete contrast.  A new land, a new language, a familiar food, a truly foreign land.  Japan has called to me for years.  I have always longed to follow one of my tunas from my boat, to Japan and finally to the plate, and have often contemplated a novel or storyline.  Being the largest market and consumer of Maguro(bluefin tuna) Japan demands respect.  My curiosity was finally met upon this trip. My girlfriend and I went to the famous Tsukiji market, with eyes wide and jaws dropped.  I was floored. Together we saw first hand how it all goes down on the other side. Tunas from Japan, USA, Mexico, Spain, Australia, etc. all were displayed orderly.  Bluefin, Bigeye and Yellowfin all in rank like soldiers aligned to quench the raging appetite for tuna in Japan.

After the action, around 6:30 a.m. we took breakfast, which was sushi and beer!  Edo-style sushi, which is the classic Tokyo style of eating consists of a set menu,  always starts with the most delicate and subtle flavors first and finishes with harder flavors. This is also the most ubiquitous sushi. So we started with Toro(tuna belly) rich in fat and subtle in texture and ended with Maki rolls of variety.
